Easy Vegan Mac and Cheese

  • 2 tbsp olive oil
  • 1 shallot, sliced
  • 1 clove garlic, minced
  • 4 packed cups spinach
  • ¼ pasta water cup water
  • ½ SriMu elder wheel
  • 1 tsp celtic salt
  • ¼ tsp black pepper
  • 1 8 oz package elbow pasta of choice, cooked
  • ¾ tsp nutmeg

  1. Heat a large pan over medium heat. Add the olive oil and shallot and saute for five minutes, stirring occasionally.
  2. Add the garlic and saute for 3 minutes. Add the spinach and cook for 3 minutes or until the spinach is wilted.
  3. Add the SriMu, pasta water, salt, pepper, and nutmeg to a blender and blend until smooth.
  4. In a large bowl, toss the pasta with the SriMu cheese sauce. Add the spinach and shallot mix on top and garnish with fresh cracked black pepper.
